Fried Chicken - Chicken drumsticks cooked with Indian spices, dipped in Egg and Deep Fried

Crispy fried chicken drumsticks - Chicken drumsticks cooked with ginger, garlic, Indian spice powders until they are half way cooked through. Then they are dipped in herbed egg mixture and deep fried. Juicy and soft from inside, perfectly seasoned inside and super crispy outside. Best served hot with garlic dip. No need to marinate chicken. Easy to make and can be made quickly.


  • 6 Chicken drumsticks ( make 2 slits on the drumsticks; slits help masala to go deep inside the chicken)
  • 1/2 Tablespoon finely chopped Ginger
  • 1/2 Tablespoon Garlic Paste or finely chopped garlic
  • 2 Tablespoon Coriander powder
  • 1 Teaspoon Red Chilli Powder / Fresh ground pepper
  • 1/4 Teaspoon Turmeric Powder
  • 1/4 Teaspoon Garam Masala
  • Salt as required
  • 1 Cup Water to cook chicken
  • Oil for deep frying

To coat the drumsticks

  • 1 Large Egg
  • a pinch of dried thyme
  • a pinch of garlic powder
  • a pinch of dried oregano
  • a big pinch of freshly ground pepper or red chilli flakes
  • 1 Tablespoon Chopped fresh Cilantro Leaves
  • Salt as required


1. In a medium pan, combine chicken, ginger, garlic paste, coriander powder, red chilli powder, turmeric Powder, garam masala, 1 cup water and salt. Cook on high flame until all the water evaporates completely and chicken pieces are half way cooked through. Stir intermittently and flip sides couple of times to ensure even cooking. Might take 15 to 20 min for the water to evaporate. Stir chicken occasionally to make sure they are cooked evenly
2. In a pan, heat oil for deep frying chicken pieces. Keep the flame medium
3. In a small bowl , beat egg. Add dried thyme , oregano, garlic powder, pepper, salt and chopped cilantro leaves to the egg and mix well
4. Dip cooked chicken pieces one after another in the egg mixture , coat egg evenly on the chicken piece and drop it gently on the hot oil. Fry on medium flame for a min. Flip side and fry chicken on the other side for a min. Make sure you keep the flame to medium heat or low heat. otherwise chicken coated with egg will burn quickly
5. Fry 2 drumsticks at a time in the oil. Continue to dip rest of the chicken pieces in egg mixture and deep fry in batches of 2 or 3
6. Drain fried chicken on a kitchen towel and serve hot with your favourite dip
