Crispy Fried Okra / Kurkuri Bhindi

Okra / Bhindi is one of our favourite vegetable and my kids love eating okra in any form. Sometimes they just eat raw ones while I am chopping them. :)  I saw this kurmuri Bhindi recipe on one of the FB groups shared by Farrukh Shadab Ansari. Totally loved her crispy bhindis and bookmarked it from her food blog at http://www.cubesnjuliennes.com. I followed her recipe exactly with few changes in spices to suit my family's taste buds. Ingredients

  • 500 grams of Okra
  • Oil for deep frying ( it absorbed quite a lot oil)

For the marinate

  • 3 Tablespoon hung curd / Sour Cream
  • 1 Teaspoon Red Chilli Powder / Ground Pepper
  • 1/4 Teaspoon Turmeric powder
  • 1/4 Teaspoon dried thyme
  • Salt as required

For coating

  • 1/2 Cup Rice Flour
  • 1/2 Cup Chickpea Flour (available at Indian Grocery Stores)
  • 1/4  Teaspoon Baking Soda
  • 1/2 Teaspoon Red Chilli Powder
  • Salt as required

Directions

1. Wash Okra and pat them dry with kitchen towel
2. Cut them into quarters lengthwise
3. In a microwave safe bowl add okra and microwave on high for 3 min
4. In a large mixing bowl mix together all the ingredients listed under marinate
5. Add microwaved okra to the marinate and toss them gently to coat each piece with marinate

 


and set aside for 30 min
6. Heat oil in a deep pan
7. Mix all the ingredients listed under coating in a separate bowl. Its a dry mixture. Now take 5 to 6 previously marinated okra and add them to the dry coating mix

                                    

8. Since okra is marinated in curd, it will hold the dry coating well and no need to add water to the coating
9. After coating them drop them in hot oil. Fry them on medium flame till golden. Fry 5 to 6 in a batch and continue to fry in batches for the rest of the marinated okra
10. Serve hot with your favourite dip
