Thayir Vadai / South Indian Style Curd (dahi) Vada

Thayir Vadai is a south Indian snack. Deep fried urad dal vada is soaked in hot water and then immersed in spiced yogurt / dahi mixture. It is topped with shredded carrots, boondi, cilantro leaves and served chilled. No chat masala , no green chutney , no saunth chutney.  But I love this version of dahi vada than the chaat version that is popular in North India

 
 
 

 

Ingredients  

  • 8 Urad Dal Vadas ( Follow recipe from here to make vada )
  • 1 Cup Thick curd / plain yogurt
  • 1/4 Cup Boondi
  • 1/4 Cup shredded fresh carrot
  • 1 Tablespoon Chopped cilantro leaves
  • a pinch of Hing / Asafoetida
  • Salt to taste 

For Grinding  

  • 2 Tablespoon Fresh coconut
  • 1 Green chilli
  • 5 mint leaves
  • 1 Tablespoon cilantro leaves
  • 1 Tablespoon water
  • Salt to taste 

Directions 

1. Make urad dal vadas and drain them on paper towel. Here is the link to urad dal vada recipe

 


2. When the vada is still warm , add them to a bowl with 2 cups of hot water. Add 4 vadas at a time and let them sit in the hot water completely immersed for 2 minutes

3. Remove from water, squeeze water completely by pressing the vada between two spoons. Soak and drain all vadas in hot water in batches of four

4. Grind all the ingredients listed under grinding

                                   


5. Beat curd nicely until it is smooth

6. Add the paste we grind at step number 4 to the curd and mi well. Check for salt and adjust

7. Now add , all the soaked and drained vadas from step number 3 to the curd mixture and mix gently to coat even vada with curd

8. Let the vadas be completely immersed in curd for atleast 15 to 20 minutes

9. Serving : Serve vada with curd mixture. Add boondi , shredded carrots and cilantro leaves for garnish. If you like tadka, you can add tempering of mustard seeds and jeera (cumin seeds) on top of the vadas and serve
