Punjabi Chole Masala Spice Powder / Chickpea Masala Powder

Chana Masala / Chole Masala is a popular Punjabi dish made out of chickpeas. It is a semi gravy and usually served with roti / chapathi. It is a classic dish and we usually order chole masala when we visit a North Indian Restaurant here in Chennai. In Restaurants, they serve chole masala with bhature / bhatura.



I make chole masala almost 2 times a week as a side for chapathi. Everytime I make fresh chole spices from scratch. Chole spice powder is a mixture of spices dry roasted and grind it coarse paste. I made this spice powder today and put it in airtight glass container and stored in freezer.


Ingredients

  • 3 Red Chillies
  • 1 Inch Cinnamon Stick
  • 2 Black Cardamom
  • 3 Cloves
  • 1 Teaspoon Black Pepper corns
  • 1 Teaspoon Cumin Seeds
  • 1 Teaspoon Fennel Seeds
  • 1 Tablespoon Coriander Seeds

Directions

 
 
1. In a pan over low heat , add all the items listed under ingredients

2. Roast on low flame for 7 to 8 minutes or until the spices are roasted and you can smell the aroma of roasted spices

3. Cool completely

4. Add all the roasted ingredients in a spice grinder and grind it to coarse powder

5. Store it in airtight container / in the freezer and use it in chole masala as a spice powder
