Mixed Vegetables cooked in coconut milk based gravy is a healthy and delicious tasting side for Roti, Naan or flavoured rice. I used my kids' favourite veggies - carrot, potato, green beans, baby corn. You can add your favourite vegetables or whatever vegetable is available.
2. In a pan, heat oil. When the oil is hot , add onions and fry until they are soft
3. Then add mint leaves and the paste we prepared at step number 1 and fry nicely until oil starts separating from the mixture
4. Add tomatoes and fry till they are mushy and soft
5. Add coriander powder, red chilli powder, turmeric powder and add 1 tablespoon water and fry nicely for 5 minutes
6. Add all the chopped veggies and 2 Cups water, salt
7. Cook for 10 minutes until the veggies are almost cooked
8. Add coconut milk and cook for 5 more minutes
9. Switch off the flame and add chopped cilantro leaves
10. Serve hot with roti or naan or rice
Ingredients
- 2 Cups Mixed Vegetables chopped approximately to equal size
- 2 Tablespoon Oil
- 10 Fresh Mint Leaves
- 1 Medium Onion chopped finely
- 1 Tomato Chopped finely
- 1 Inch Fresh Ginger piece
- 6 Garlic Cloves
- 1 Green Chilli
- 1/2 Inch Cinnamon Piece
- 2 Cloves
- 1 Green Cardamom
- 2 Tablespoon Coriander powder
- 1 Teaspoon Red Chilli Powder
- 1/2 Teaspoon Turmeric Powder
- 1 Cup Coconut Milk
- Salt to taste
- 1 Tablespoon chopped coriander leaves chopped
Directions
