Yellow Pumpkin with roasted peanuts

Absolutely delicious and healthy curry with pumpkin and roasted peanuts. This curry is a perfect side to serve along with spicy flavoured rice. It tastes mildly sweet, mildly spicy and roasted nuts add a nice crunch. This is my mom's recipe. She makes delicious and unique combinations of vegetables and nuts. This is one of the best sides and our family's favourite side to serve on a vegetarian meal day. Kids love this since it has a sweet taste and nutty flavour to it. Quite addictive, I do not even need rice or bread, I can eat it as such ! Yummm !



Ingredients

  • 1 Cup Yellow Pumpkin - peel remove the skin and dice it evenly
  • 1/4 Cup plain roasted peanuts
  • 1 Small onion chopped finely
  • 1 Tablespoon Oil
  • 2 Whole red chillies
  • 1/2 Teaspoon Mustard Seeds
  • 1/2 Teaspoon Urad Dal
  • 1/4 Teaspoon Cumin Seeds
  • 1 Tablespoon Grated coconut
  • 1 Teaspoon Chopped cilantro leaves for garnish
  • Salt to taste

Directions

1. In a pan over medium heat, add oil. When the oil is hot, add mustard seeds. When they pop, add cumin seeds, urad dal. Fry until the urad dal is light golden
2. Add broken red chillies and fry for few seconds
3. Add chopped onions and fry until they are just soft

                              


4. Add diced pumpkin pieces along with 1/2 Cup water and salt. Cook on medium flame

                             


5. Meanwhile, in a spice jar grind roasted peanuts into coarse powder

                                    


                                   


6. Add peanut powder and grated coconut to the pumpkin and give it a nice stir

                                


7. Switch off the flame when all the water evaporates and the pumpkin is cooked through. If the pumpkin is not cooked enough, add 1/4 more water and cook
8. Garnish with chopped cilantro leaves and few whole peanuts and serve as a side
