Fried Baby corn is a well known Chinese starter / Appetizer. Baby Corn strips are slit in half , dipped in spicy batter and deep fried. I used batter of gram flour / besan and spices. These are too good to resist. One can eat at least 50 of them with a cup of tea. I fried two 500 grams packets and all vanished in few minutes. It is very easy to prepare and they are crispy and delicious.
2. Add besan, salt, red chilli powder, hing , corn flour to the baby corns and mix them gently with a spoon
3. Sprinkle water to the mixture such that the mixture is just wet and not runny. If it is runny, you can add more besan to make it thick
4. In a small sauce pan, heat oil for deep frying
5. Using a spoon take 4 or 5 baby corn strips, slide them gently into the hot oil
6. You need to be extra careful when you slide baby corns in the oil. Stay back and gently drop them in oil
7. Fry until the baby corns are light golden. Turn side and fry on the other side also
Ingredients
- 500 Grams Baby Corn - Cut them in half lengthwise
- 1 Green Chilli chopped finely
- 5 curry leaves chopped finely
- 1 Tablespoon Cilantro Leaves chopped finely
- Salt to taste
- 3 Tablespoon Besan
- 1 Teaspoon Red chilli Powder ( my kids don't eat spicy fritters. My fritters were mildly spiced. Please adjust according to your taste)
- 1 pinch of Hing
- 1 Tablespoon Corn flour
- 2 Teaspoon water for mixing
- Oil For deep frying
Directions
1. In a mixing bowl, add baby corn, green chillies, curry leaves , cilantro leaves and using a spoon mix it gently
2. Add besan, salt, red chilli powder, hing , corn flour to the baby corns and mix them gently with a spoon
