An Egg a day keeps the doctor away ! :) That's what my daughter's paediatrician suggested. I should give one soft boiled egg everyday at 11 in the morning. Though some of my family members do not eggs, I buy eggs for my daughter. Today when I was boiling an egg for her, I had a craving for eggs too. Since I do not like eating just plain eggs, I made this caramelized onion and egg curry. It is very simple recipe and can be done in less than 10 minutes.
Caramelized onions give a nice sweet flavour and the egg is well coated with spices. I baked whole wheat buns yesterday. I had this egg and onion curry as a stuffing inside the bun and with lots of cheese topped. Delicious it was ! This is perfect for picnics or on the go lunch. You can pack sandwich breads/ buns and pack this egg curry separately in a box. Assemble everything together at the time of serving. Add spinach or lettuce and make it a healthy sandwich / burger
2. In a pan, heat oil. When the oil is hot, add mustard seeds, cumin seeds. When the splutter, add urad dal and fry till the dal is golden
3. Add curry leaves and let them splutter
4. Add coriander powder, chilli powder, turmeric powder, salt and mix well
5. Turn the flame to the lowest setting. Add onions and fry just until the onions are soft
6. Cut eggs in to two lengthwise. Add the eggs to onion and mix very gently making sure not to mash the egg yellow
7. Serve hot with bread or bun

Ingredients
- 2 Eggs
- 2 Medium Sized onions sliced thinly ( I used red onion )
- 1 Tablespoon Oil
- 1/2 Teaspoon Mustard seeds
- 1/2 Teaspoon Cumin Seeds
- 1/2 Teaspoon Urad dal (optional)
- 1/2 Teaspoon Red chilli powder
- 1/4 Teaspoon Turmeric Powder
- 1/2 Teaspoon Coriander Powder
- Salt to taste
- pepper to taste
- 4 to 5 curry leaves
Directions
1. Boil Eggs : This is how Boil Eggs. Eggs should be at room temperature. Add the eggs to a pan with enough water to immerse eggs. Add 1 Teaspoon salt. Bring it boil. Boil for 2 to 3 minutes.
