Refreshing , healthy salad with chickpeas, English cucumber , diced red onions, tomatoes with zesty lemon olive oil dressing. Top it with crumbled feta cheese and salad greens for a complete satisfying meal.

Ingredients
- 1 Cup cooked Chickpeas ( if you are using chickpeas from the can, drain and then rinse thoroughly in running tap water and pat dry )
- 1/2 Cup English Cucumber diced
- 1/4 Cup tomatoes chopped ( original recipe uses cherry tomatoes. I used the regular tomato , removed the seeds using a spoon and diced them )
- 1/3 Cup diced red onion
- Crumbled Feta Cheese to top
- mixed salad greens
For the Dressing
- 2 Tablespoons of Olive Oil
- Juice of one lemon
- Zest of a lemon
- 1/4 Teaspoon Ground Cumin
- 1/4 Teaspoon Oregano
- 1 Garlic crushed with salt
- 1/4 Teaspoon Red chilli flakes ( optional )
- Salt to taste
- ground black pepper to taste
Directions
1. In a large bowl, add chickpeas, cucumber, red onions, tomatoes and combine everything. Cover and refrigerate until ready to serve
