Carrot and Beans Poriyal is a stir fried side that can be prepared in jiffy and it pairs well with steamed rice. This is one of the sides I often make for my son's lunch box. There is no chilli in this dish and it is a very healthy side to serve for your family. This one is easy to make on a busy week night.
2. Add onions and sauté till onions are soft
3. Add chopped carrots and green beans and sprinkle salt. Give it a good stir
4. Add 1/4 Cup water and cook until the water evaporates completely and the veggies are cooked
5. Add grated coconut and stir it with veggies
6. Switch off the flame
7. Serve as a side with steamed rice and curry / sambar / rasam
Ingredients
- 1/2 Cup Chopped Green Beans
- 3/4 Cup Chopped Carrots
- 1 Medium Onion Chopped finely
- 1 Tablespoon Oil
- 1/2 Teaspoon Mustard Seeds
- 1/2 Teaspoon Urad Dal
- 1/2 Teaspoon Cumin Seeds
- 1 Tablespoon Grated Fresh Coconut (optional)
- Salt to taste
Directions
1. In a pan, heat oil. Keep the flame on medium. When the oil is hot, add mustard seeds. When the mustard seeds splutter, add urad dal and cumin seeds. Fry until the urad dal is light golden2. Add onions and sauté till onions are soft
3. Add chopped carrots and green beans and sprinkle salt. Give it a good stir
4. Add 1/4 Cup water and cook until the water evaporates completely and the veggies are cooked
5. Add grated coconut and stir it with veggies
6. Switch off the flame
