Schezwan Sauce is an Indo - Chinese sauce made with red chillies , garlic, ginger and Soy Sauce. It is a very spicy sauce. You will love this sauce if you love spicy food. Making your own Schezwan sauce at home is very easy. Just few readily available ingredients in the kitchen and it is a very quick recipe which can be done in less than 15 minutes.
I made Schezwan sauce to make Schezwan fried rice. I have a spice freak at my home who loves Schezwan fried rice. I served Schezwan fried rice along with chilli paneer and it was a delicious and tasty combo. Everyone had 2 to 3 servings and no left over from lunch. I love cooking food that brings smile on face and healthy too. This recipe is according to my family's taste of spice levels. Please adjust red chillies according to your taste. The recipe I am posting here is not very spicy, but I would say it was mild.
2. In a microwave safe mug heat 1 cup water. Add red chillies to the hot water and let them sit in the water for 5 minutes
3. Drain the chillies and grind it to fine paste in a food processor
4. In a pan, heat oil. When the oil is hot, add chopped ginger and garlic and fry on high flame for about a minute. Make sure not to burn garlic
5. Reduce the flame to low and add red chilli paste we grind at step number 3
6. Give it a nice stir and let it cook until the oil separates from the chilli paste
7. Now add soy sauce, tomato sauce and 1/4 Cup water. Add salt to taste. Make sure you taste the sauce before adding salt. Soy sauce has salt. So you may need to add only very little salt. Allow it to cook for 5 to 8 minutes or until all the water evaporates and you have thick sauce with oil floating on the top
8. Switch of the flame and we have spicy Schezwan sauce is ready for making fried rice or vegetable gravy
