A omelette recipe that is perfect for breakfast, snack , dinner and totally delicious. It is cooked with butter, onions, tomatoes and green chillies. You can add bell peppers, sautéed mushrooms or shredded cheese, ham , spinach. Variations are endless , get creative and add your favourite veggies or meat.
It is quick and easy to make and it is a quite filling meal. Spinach omelette , mushroom and cheese omelettes are my favourites.
Yield : 2 Omelette
2. Crack the eggs one at a time and add them to the bowl
3. Add salt and using a fork beat the eggs until they are frothy
4. In a pan, heat 1 tablespoon butter
5. When the butter melts, pour half the quantity of the egg mixture into the pan. Keep the remaining egg mixture for the second omelette :)
6. Keep the flame low through out the cooking process. Slow cooked eggs are more fluffy and soft than the ones cooked over high flame
7. Sprinkle chopped tomatoes and freshly ground black pepper
8. Cook on low flame for 5 to 6 minutes or until the egg is cooked through completely
9. I do not flip side of my omelette. However, you can flip and cook on the other side too
10. Repeat the process for the remaining egg mixture and make the second omelette
11. Serve hot

- 1/2 Tomato chopped finely
- 1 Green Chilli chopped finely ( optional; you can use jalapeno peppers too instead of green chilli)
- 1 Tablespoon Chopped cilantro leaves
- 1/2 Teaspoon Salt ( adjust according to your taste)
- Freshly ground black pepper
