Condensed Milk Pound Cake - A quick fix for sweet cravings, yes process all the ingredients in a food processor / mixer and bake it ! No fancy equipment required, just mix the wet ingredients into dry ingredients using a whisk and bake. This cake is not too sweet , not too dense and it tastes like eating milk peda in a cake form. Orange juice adds a nice fresh citrus flavor to the cake.. Best served with tea / coffee.
Yield : One loaf
Ingredients
- 2 and 1/2 cups of All purpose Flour / Maida
- 2 Teaspoon of Baking Powder
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon cardamom powder ( optional )
- 1/4 Teaspoon Salt
- 3/4 Cup Unsalted Butter at room temperature - melted
- One 400 gram can of Sweetened Condensed Milk
- 1 Cup Freshly squeezed orange juice
- 2 Teaspoon Vanilla Extract
Directions
1. Preheat the oven to 180 C / 350 F. Grease a loaf pan and set aside2. In a bowl, combine all purpose flour / maida , Baking powder , baking soda , cardamom powder and salt
3.In a separate bowl, add orange juice, condensed milk, melted butter, vanilla extract and mix using a spoon until the mixture is smooth
4. Make a well in the center of dry ingredients and pour in the wet ingredients we prepared at step number 3
5. Using a spoon gently mix to form a smooth batter with no lumps
6. Pour the cake batter in the prepared loaf pan and bake at 180 C for 50 minutes or until a tooth pick inserted comes out clean. My cake was done in 53 minutes in the convection mode of my microwave
Important : This loaf browns too quickly on the top. After 30 mins of baking, cover the top with a aluminium foil to prevent the top from browning.
