Lamb / Mutton Gravy

Mutton Kuzhambu / Mutton Gravy is lamb meat or goat meat in spicy and creamy coconut based gravy. Meat is pressure cooked until it is tender and then cooked along with fried onions, tomatoes, coconut milk and spices. This gravy pairs well with rice, roti, naan and Idly. Idly with mutton gravy is one of the best combo of breakfast for non vegetarian lovers. I served this gravy with steamed rice, roti, onion raita, chicken fry and pickle , what a feast it was ! Absolute Heaven. Left over gravy we had with dosa for dinner.


 

Ingredients

To Pressure cook meat : (Marinate meat for 1 hour )

500 Grams mutton / Lamb meat / goat meat
1 Tablespoon Ginger garlic paste
1 Tablespoon Thick curd
1/4 Teaspoon Turmeric Powder
1/2 Teaspoon Red Chilli Powder
1/2 Teaspoon Salt

For the Gravy :

2 Tablespoon Oil
2 Bay Leaf
2 Cloves
2 Green cardamom
1 Black Cardamom
1 inch cinnamon Stick
1 or 2 Green Chillies
1 Medium onion sliced thinly
1 Tomato chopped finely
1 Tablespoon Fresh Mint
2 Tablespoon Coriander powder
1 Teaspoon Red Chilli Powder
1/2 Teaspoon Turmeric Powder
1 Cup Coconut Milk ( If you are using canned coconut milk, mix 1/2 cup canned milk with 1/2 cup water; Canned coconut milk is very thick )
Salt to taste

Directions


1. In a pressure cooker, add meat along with 1 tablespoon ginger garlic paste, 1/2 Teaspoon Red Chilli powder, 1/4 Teaspoon Turmeric Powder, 1/2 Teaspoon Salt and 1 tablespoon curd. Let it marinate for 1 hour for minimum. Marinating in curd makes mutton soft when it is cooked.  Pressure cook on medium flame for 8 to 10 whistles. I cook mutton to very soft texture, if you hold it in your hand, the meat will slip off the bones easily. If you like mutton little hard, you can cook for 5 whistles

                             


2. In a pan, heat 3 tablespoon oil. When the oil is hot, add bay leaf, clove, cinnamon stick, black and green cardamom. When they splutter, add onions and green chilli and fry till onions are pink and soft. Add salt to taste

                               

                               




3. Then add mint leaves and fry for a minute. Add chopped tomatoes and fry until the tomatoes are mushy

                                             

                                  



4. Add coriander powder, chilli powder, turmeric powder and give it a nice stir

                              


5. Add pressure cooked meat along with 1 and 1/2 cups of water and let it cook on medium flame for about 15 minutes

6. Add coconut milk and cook for 5 minutes more. You can add potatoes or brinjal along with mutton. I added brinjal this time. Switch of flame and garnish with chopped cilantro leaves

                         


7. Serve hot with rice / roti with raita
