Green Peas Rice for Kids Lunch Box

This recipe is for kids lunch box. This rice does not have onions, chillies or spices. I pack rice for my son 3 days in a week and it is mostly one pot meal with his favourite vegetable. I use carrots, green beans, green peas, sweet corn alternatively. This rice is healthy and tastes delicious. I cook rice for everyone in rice cooker in the morning. After the rice is cooked, I flavour the steamed rice along with vegetables to make this rice. It is very simple and can be done in less than 10 minutes if you have steamed rice.




Ingredients

  • 3/4 Cup Steamed rice
  • 1/4 Cup Green Peas (thaw if frozen)
  • 1/4 Teaspoon Mustard seeds 
  • 1/4 Teaspoon Urad Dal
  • 1/4 Teaspoon Cumin Seeds
  • a pinch of Turmeric powder
  • salt as required

Direction

1. Steamed rice should not be sticky. It should have separate grains
2. Add Green Peas with pinch of salt and turmeric powder in a microwave safe bowl. Add 1 Tablespoon water and microwave on high for 2 min
2. In a pan add 1/2 Teaspoon of oil. when the oil is hot, add mustard seeds and cumin Seeds. When they pop, add urad dal and sauté till it becomes light golden. You can skip adding mustard and cumin if your kids doesn't like them
3. Add turmeric powder,salt and immediately add green peas. Let it cook for 2 minutes
4. Add steamed rice to the pan. Give it a nice stir. Check and Adjust seasoning. Switch of flame. You can drizzle 1/2 Teaspoon ghee if your kid likes ghee with rice
5. Let it cool in the pan. Pack it in lunch box when it is cool
