Shredded Chicken with Shallots and Ginger

Shredded Chicken with Shallots is a recipe shared by my friend. This is the best way to use left over rotisserie chicken and remake in to something delicious. We have this chicken masala with roti or rasam rice. This is great to stuff inside pita bread or even sandwiches.
 
Recipe is very simple, just throw all spices, peeled shallots and shredded chicken and cook on low flame for few minutes until all flavours are blended well with the chicken. Since I easily get shallots here, I used shallots. You can use chopped onions instead. I like shallots for they taste little bit sweeter and nutty than onion and they look like little pearl in chicken when cooked up :)
 
 

Ingredients

  • 2 Cups of cooked Chicken - shredded
  • 1/2 Cup Shallots - peeled and washed / You can use use chopped onion instead of shallots
  • 3 Tablespoon Oil
  • 1 Tablespoon finely Chopped Ginger
  • 1 Tablespoon finely Chopped Garlic
  • 1/4 Teaspoon Black Peppercorns
  • 1/4 Teaspoon Turmeric Powder (optional)
  • 1 Teaspoon Chopped Cilantro Leaves for garnish
  • Salt and Ground pepper as required

Directions

1. In a pan, heat 3 tablespoon Oil. When the oil is hot, add chopped garlic, ginger and sauté for 2 min or until garlic turns light brown
2. Add shallots / onion and fry till onions are soft
3. Add peppercorns , turmeric powder, salt and give it a stir. Then add shredded chicken and mix well. Add ground pepper as per your taste
4. Cook on low flame for about 5 to 10 minutes. Switch off flame and garnish with cilantro leaves. Serve hot with rice or roti. Use it in sandwich or pita bread along with fresh vegetables. shhhh.... no one will know you used left over chicken, I bet everyone in your family will love it
