Quick and Easy Milk Fudge

A quick and easy milk fudge with milk powder flavored with saffron and topped with pistachios. Just few readily available ingredients and takes less than 20 minutes to make. These are soft, rich and creamy. Saffron adds a nice flavor and nuts gives them a nice crunch to bite.
 
 


Yield : 12 Fudge Cubes

Ingredients

  • 1/4 Cup Granulated white Sugar
  • 1/2 Cup water
  • 1 and 1/2 Tablespoons of Ghee or unsalted Butter
  • 1 and 2/3 Cups of milk powder
  • a big pinch of saffron strands
  • 2 Tablespoons Chopped pistachios
  • 1 Teaspoon grated dark chocolate for garnish

Directions


1. Grease a cookie Sheet and line it with parchment paper

2.  In a sauce pan, add sugar and water and place over medium heat. Keep stirring until the sugar dissolves. Bring it to boil and boil the syrup on medium flame for 10 minutes. Switch off the flame and let the syrup cool down slightly
3. To the warm milk, add saffron and wait for a minute. Give it a nice stir
4. Then add milk powder and using a whisk mix everything together until there is no lump. Return the sauce pan to low heat and keep stirring the mixture and scraping the sides for 4 minutes
5. Pour the thick mixture into the greased and line cookie sheet/ baking tray and using a spatula spread the mixture evenly
6. Top the fudge with chopped pistachios and press them gently on the surface of the fudge. Let the fudge cool completely at room temperature
7. Once it is completely cool, using a sharp knife dipped in hot water, cut the fudge into cubes. Make sure to dip the knife in hot water before you cut each fudge cube
8. Store in air tight container in the refrigerator and consume this fudge on the same day or within 2 days of preparation
