Greek Style Chickpea Salad

Refreshing , healthy salad with chickpeas, English cucumber , diced red onions, tomatoes with zesty lemon olive oil dressing. Top it with crumbled feta cheese and salad greens for a complete satisfying meal.

 

Ingredients

  • 1 Cup cooked Chickpeas ( if you are using chickpeas from the can, drain and then rinse thoroughly in running tap water and pat dry )
  • 1/2 Cup English Cucumber diced
  • 1/4 Cup tomatoes chopped ( original recipe uses cherry tomatoes. I used the regular tomato , removed the seeds using a spoon and diced them )
  • 1/3 Cup diced red onion
  • Crumbled Feta Cheese to top
  • mixed salad greens

For the Dressing

  • 2 Tablespoons of Olive Oil
  • Juice of one lemon
  • Zest of a lemon
  • 1/4 Teaspoon Ground Cumin
  • 1/4 Teaspoon Oregano
  • 1 Garlic crushed with salt
  • 1/4 Teaspoon Red chilli flakes ( optional )
  • Salt to taste
  • ground black pepper to taste

Directions


1. In a large bowl, add chickpeas, cucumber, red onions, tomatoes and combine everything. Cover and refrigerate until ready to serve

3. For serving : Add the dressing to the salad and toss gently to coat the dressing. Serve with salad greens and topped with crumbled feta cheese
