A quick and easy side with shredded cabbage. Cabbage stir fried with shallots, ginger and garlic and topped with freshly grated coconut. Crunchy cabbage with the sweetness of coconut and flavor from ginger is heavenly. Best served with steamed rice or flavoured rice as a side.
Ingredients
- 2 Cups Shredded Cabbage
- 1 and 1/2 Tablespoon coconut oil
- 1/2 Teaspoon Cumin Seeds
- 1 Sprig of curry leaves ( I forgot to add curry leaf, adding curry leaf gives a nice flavor /aroma to the dish )
- 2 Garlic cloves crushed and chopped finely
- 1/2 Teaspoon fresh ginger chopped finely
- 2 Dry Red Chilli or 1 Teaspoon red chilli flakes ( Adjust according to your taste)
- 1/2 Cup Shallots chopped finely
- 1/3 Cup Freshly grated coconut
- Salt to taste
- Chopped cilantro leaves for garnish
Directions
1. Using a grater / food processor shred cabbage into thin long strips. Add cabbage in a colander and wash it several times in tap water. Drain the water completely and set aside
2. In a large wok / kadai / pan, heat coconut oil over medium flame
3. When the oil is hot, add cumin seeds and wait for the seeds to splutter
4. Then add curry leaves and fry until they turn crispy
5. Add chopped ginger and chopped garlic and fry for a minute
6. Add broken dry red chillies and fry for 30 seconds
7. Add finely chopped shallots and fry until they are soft
8. Now increase the flame to high and add cabbge. Mix everything together and season with salt
9. Stir continuously and cook cabbage in high flame until they turn color from pale green to light yellow
10. Add grated coconut and toss everything together
11. Switch off the flame and season with chopped cilantro leaves
12. Serve hot with steamed rice or flavoured rice as a side
