Sweet Corn Rice - Kids Lunch Box recipe

Sweet corn rice is very healthy and delicious tasting rice for Kids' Lunch Box. It can be made in jiffy with steamed rice and corn kernels. I used fresh corn, you can used canned or frozen corn. If your kids eat spicy food, you can add red chilli powder. My kids don't eat anything spicy, hence I skipped adding red chilli powder.





Ingredients

  • 3/4 Cup Steamed rice
  • 1/4 Cup Sweet Corn Kernels (thaw if frozen)
  •  2 Tablespoon finely Chopped Onions
  •  1 Tablespoon finely chopped Tomato
  • 1/4 Teaspoon Mustard seeds 
  • 1/4 Teaspoon Urad Dal
  •  1/4 Teaspoon Channa Dal
  • 1/4 Teaspoon Cumin Seeds
  • a pinch of Turmeric powder
  • salt as required

  • Direction 

    1. Steamed rice should not be sticky. It should have separate grains

    2. Add Sweet Corn with pinch of salt and turmeric powder in a microwave safe bowl. Add 1 Tablespoon water and microwave on high for 4 minutes

    3. In a pan add 1/2 Teaspoon of oil. when the oil is hot, add mustard seeds and cumin Seeds. When they pop, add urad dal , channa dal and sauté till it becomes light golden. You can skip adding mustard and cumin if your kids doesn't like them

    4. Add onions and tomatoes and sauté until onions are soft. Add turmeric powder, salt and immediately add corn. Let it cook for 2 minutes


                            
                  
    5. Add steamed rice to the pan. Give it a nice stir. Check and Adjust seasoning. Switch of flame. You can drizzle 1/2 Teaspoon ghee if your kid likes ghee with rice

                           



    6. Let it cool in the pan. Pack it in lunch box when it is cool
