Stir Fried Potatoes

Stir fried potatoes are easy to make, potatoes are cooked in microwave and then stir fried in pan on low flame. They are crispy and mildly spiced and pairs well with sambar rice , curd rice or flavoured rice. I use this potatoes to stuff inside dosa or sandwich also. This is my family's most favourite potato preparation. You just need to leave them in the pan on low flame and they will be done. No Onion, No Tomato !


Ingredients

2 Cups Chopped potatoes ( chop them evenly in the same size)
1 Teaspoon Red Chilli Powder ( adjust according to your taste)
1/4 Teaspoon Turmeric Powder
Salt to taste
a big pinch of Hing / Asafoetida
1/4 Teaspoon dry thyme
2 Tablespoon Oil

For the Seasoning :

1/2 Teaspoon Mustard Seeds
1/4 Teaspoon Cumin Seeds
1/2 Teaspoon Urad dal

Directions : 

1. In a microwave safe bowl, add chopped potatoes


                                   


2. In a small bowl, mix together red chilli powder, turmeric powder, salt and thyme
3. Add this spice mixture to the potatoes. Add 1 Teaspoon oil and 2 tablespoon water to the potatoes

                                   


4. Microwave on high for 4 minutes stirring in between after 2 minutes

                                

5. Remove from microwave and toss them gently using a spoon. Set aside and let them cool for 5 minutes
6. In a wide pan, heat rest of the oil. When the oil is hot add the items listed under seasoning. When the mustard splutters, add microwaved potatoes and stir well

                                  


7. Give it a good stir and leave it on low flame. Stir once in 5 minutes so that all the sides of the potatoes are getting fried
8. Stir fry  on low flame for 20 to 25 minutes or until the potatoes are super crisp and nice golden color
9. Serve warm with rice
