Mixed Vegetable Gravy for Fried Rice

Sweet Corn, Bell peppers, Onion and Zucchini cooked in Soya Sauce based gravy to serve along with Fried Rice. When you are craving for Chinese food, forget about your favourite Chinese take out place. Make this gravy at home in Jiffy. Add your favourite veggies in a soya sauce based sauce and you can enjoy a satisfying meal that tastes better than restaurants. I made this gravy to pair with mushroom fried rice and we loved it


 Ingredients

  • 1/2 Red Bell Pepper diced
  • 1/2 Cup Sweet Corn Kernels ( I used fresh sweet corn; you can use canned )
  • 1 Cup Zucchini Slices
  • 1 Large Onion Sliced
  • 2 Tablespoon Chopped Garlic
  • 1 Teaspoon Chopped Ginger
  • 2 Green Chillies Chopped
  • 2 Tablespoon Soy Sauce
  • 1 Tablespoon Tomato Sauce
  • 2 Tablespoon Corn Flour + 1/4 Cup water
  • 2 Tablespoon Sesame seed oil
  • salt as required ( check salt since soy sauce has salt too )
  • Freshly ground black pepper to taste
  • 1 Tablespoon chopped spring onion greens for garnish

  • Directions :


    1. In a pan, heat 1 teaspoon Oil. When the oil is hot, add chopped ginger , garlic,  onion and Green Chillies. Fry on high flame for one minute

                                       
     

     

    3. Then add zucchini, bell pepper and Sweet Corn and fry them for 3 minutes

                                         
                          


                         


    4. Now add soy sauce and tomato sauce and mix gently                                        
      
    5. Add about 3 Cups of water and salt,  pepper to taste. Bring it to boil

                   
                                



    6. In a small bowl, mix corn flour and 1/4 cup water. Add this mixture to the vegetables

                        


    7. Reduce the flame to the lowest setting and cook for 5 minutes or until the gravy thickens to desired consistency

    8. Serve hot with spring onion greens sprinkled on the top
