Burfi or Barfi is a sweet made with condensed milk and sugar. There are many varieties of burfi depending on the key ingredient used. This recipe is for coconut burfi and it is made in microwave. It is easy to make , done in 5 minutes and tastes delicious.
I used freshly grated coconut and toasted them in oven for quick 5 minutes. You can use dry coconut too. My mother makes coconut burfi with desiccated coconut and it is stove top method. Will post traditional burfi recipe soon. For me microwave method worked great and we finished burfis immediately after taking pictures. Kids loved the pink color and the cherry sprinkled on the top
Key ingredients in making this burfi are coconut, Milk Chenna, Semolina, condensed milk, cardamom powder. I added wilton gel color pink to make them in pink color. You can just make plain burfis without any color.
2. Prepare Milk Chenna : Heat 200 ml of milk in a pan. When the milk is about to boil and raise to the top, add 1/2 Tablespoon Lemon Juice and give it a good stir. It will start curdling and clear whey will separate from the milk. Drain the whey completely and wash the Chenna in tap water. Squeeze excess water. Chenna is ready to used. You can also refer to my paneer recipe where I explained making chenna with step wise pictures
3. In a microwave safe bowl, add coconut, chenna, semolina, condensed milk and cardamom powder and pink color. Stir everything together
4. Microwave on High for 30 seconds. Take the bowl out, and give it a stir. Again microwave on high for 30 seconds. Continue microwaving for the interval of 30 seconds and stirring in between for 2 more minutes.
5. At this stage, condensed milk will be thicked and everything together will be like a thick mass.
Remove the bowl from microwave
6. Pour the content in a greased plate and cut in to squares. Let the mixture cool completely
7. I made couple of balls with the mixture and it was yumm and looked attractive too

- 1/4 Cup Condensed Milk
- 1/4 Teaspoon Cardamom Powder
