Ingredients
- 1 Cup Basmati Rice
- 2 Tablespoon Oil
- 1 Teaspoon Ghee ( optional)
- 1/2 Teaspoon Cumin Seeds
- 1 Bay leaf
- 2 Green Cardamom Pods
- 4 Cloves
- 1 Black Cardamom Pod
- 1 inch Cinnamon Stick
- 1 Medium Sized Onion Sliced
- 1 Teaspoon Red Chilli Powder / Ground Pepper
- 1/4 Teaspoon Turmeric Powder ( Optional)
- 1 Cup Vegetable Stock / Coconut Milk
- 1 Cup water
- Salt as required
- 1 Carrot cut lengthwise to about 2 inches long
- 10 Green Beans Cut lengthwise to 2 inches long
- 1/4 Cup Green peas
- 1 Medium Sized Potatoes cut into 4 pieces
- 1/2 Cup Stir Fried Soya Chunks for Topping
Directions :
1. Wash Basmati Rice 3 times and put it into a bowl and cover with cold water. Let is soak for 30 Min
2. In a large deep pan, heat oil and ghee over medium heat. When the oil is hot, add cumin seeds and fry for 2min. Then add bay leaf, black cardamom, green cardamom, cinnamon stick, cloves and fry for 2 min
3. Add sliced onion and fry till they are soft
4. Add beans, carrots and sauté for 5 min
5. Add red chilli powder, turmeric powder and give it a good stir
6. Drain the rice and add it to the pan along with green peas. Change the heat settings to the lowest. Let the rice fry for 5 min
7. Add 1 Cup vegetable stock or 1 Cup Coconut milk along with 1 Cup water. Add salt as required. Give it a nice stir
8. Bring it to boil. Then Cover it and simmer it for 15 min over low heat until rice absorbs all water
9. Switch of flame and let the rice rest with the lid on for about 10 min
10. Serve hot topped with stir fried soya chunks and with onion Raitha
