Green Gram / Hara Moong in Jaggery Sauce with Coconut and Cardamom

Craving for something Sweet, but healthy ? Try this Green gram with Jaggery Sauce, it is super delicious, high protein snack, very light and satisfies your sweet cravings. Jaggery is a healthy substitute for Sugar.  It is a good source of essential minerals such as iron, magnesium, phosphorus and zinc. Kids will love this as after school snacks in the evening :)

Cooking Time : 25 Min
Soak Green Gram for : 5 to 6 hours or overnight
Yield : 4 Servings

Ingredients

  • 2 Cups Green Gram / Hara Moong / Pacha Payaru - Soaked overnight or atleast 5 to 6 hours
  • 1/2 Cup Jaggery - crushed or powdered ( you can use sugar instead of Jaggery but the color of the final dish will be lighter than what you see here )
  • 3/4 Cup water + 2 Tablespoon
  • 2 Tablespoon Grated Coconut ( optional )
  • 1/2 Teaspoon Cardamom Powder
  • 1 Teaspoon Ghee / Oil
  • 1 Tablespoon Chopped Cashew Nuts
  • 1 Tablespoon Raisins

Directions

1. In a pan over medium heat add ghee and fry cashew nuts. When they turn light golden , add raisin and let the raisins plum up. Remove both cashew and raisins from ghee and place them on paper towel and set aside
2. In the same pan add Jaggery and 2 tablespoon water and let Jaggery melt. When the Jaggery is completely melted , scoop out 2 tablespoon of Jaggery Syrup for set aside in a bowl for serving. We will use this syrup while serving
3. Add green gram along with 3/4 cup of water to the Jaggery and cook for 20 min on medium flame
4. Check if green gram is cooked and it is soft ( not mushy). If it is cooked, add grated coconut and cardamom powder and give it a stir. If green gram is still raw you can add 1/4 Cup more water and cook for 10 more min
5. Switch of flame and let the mixture cool slightly
6. Serving: In a serving plate place green gram sweet mixture , drizzle with previously saved Jaggery Syrup and place few pieces of fried cashew nuts and raisins
